Chilli Crayfish

Ingredient List:

  • 2 raw crayfish tails, use whole or cut into 3cm medallions retaining the shell on;
  • 4 tablespoons good olive oil
  • splash of white wine
  • 2 cloves finely chopped garlic
  • small piece of grated fresh ginger
  • 3 fresh red chillies, seeded and finely chopped
  • 3 or 4 chopped spring onions


  • 1 tbspn water
  • 2 tspn soy sauce
  • 1 tbspn brown sugar
  • 4 tbspn good tomato sauce
  • juice of 2 fresh limes


  1. To make the sauce, combine all ingredients in a small bowl and set aside.
  2. Heat the oil in a wok, then fry garlic for about 30 seconds (don’t overcook it).
    Add the ginger and chopped chilli and cook for a further 60 seconds.
  3. Stir in the crayfish medallions, cook until the meat starts to firm and turn white.
    Add a splash of white wine and a little of the soy and tomato sauce mixture and allow to evaporate.
  4. In a small pan, reduce the remaining soy and tomato sauce mixture until it thickens and shines, then stir through the chilli crayfish. Pile the mixture back in to the shells and serve immediately!
