Creamy Mango and Lime Dipping Sauce
Ingredient List:
- 1 lobster cooked and cubed
- 1 ripe mango
- 2 tbspn light sour cream
- 2 tbspn lime juice
- 1 tbspn mango and ginger chutney
Method:
- Peel 1 ripe mango, remove flesh and discard seed
- Process with 2 tbspn each of light sour cream and fresh lime juice and 1 tbspn mango and ginger chutney until smooth
- Season with salt and white pepper
- Transfer to a bowl, cover and refrigerate until required
