Indian Ocean Rock Lobster Pty. Ltd.
Crumbed Cray Nuggets
Fabulous finger food for any occasion.
1 average sized Lobster tail will make about 24 bite sized nuggets.
Ingredient List:
- 2 cups fresh breadcrumbs
- 1 egg lightly beaten
- half cup plain flour
- half cup finely grated Parmesan cheese
- 2 tbspns finely chopped parsley
- sea salt
- lemon pepper
- 1 cup good olive oil
Method:
- Remove meat from Lobster shell, cut into bite sized pieces.
- Lightly crumb by dusting in flour, egg wash and then into a mix of fresh breadcrumbs, Parmesan cheese, chopped parsley, sea salt and a sprinkle of lemon pepper.
- On your BBQ or hotplate, place a small saucepan with enough good olive oil to fry.
- Heat to medium then cook the nuggets until golden brown. (Do not overcrowd the pot – cook in batches.)
- Drain on absorbent kitchen paper and eat.
