Crunchy Crayfish with Broccoli

Ingredient List:

Ingredients  (Serves 2)

  • 1 green (raw) lobster tail
  • 2 Tbspn cornflour
  • freshly pounded sea salt and black pepper (mortar and pestle)
  • 1 large egg, lightly beaten
  • 1 cup breadcrumbs (make your own from stale bread, coarsely chopped)
  • 3 Tbspn oil (canola or peanut)
  • 3 Tbspn chopped whites of spring onions
  • 2 cups broccoli florets
  • 1 Tbspn Oyster sauce
  • 3 Tbspn lightly toasted pine nuts
  • grated rind of a lemon
  • perfectly cooked brown rice
  • sweet chilli sauce


  1. Blanch broccoli pieces by plunging in to boiling water for two minutes.  Remove, drain, plunge into cold water to refresh, drain again and keep to one side.
  2. In a large bowl, season cornflour generously with salt and pepper.  Toss lobster meat pieces into the cornflour to coat, then add the beaten egg and stir through.  Add the breadcrumbs and toss well.
  3. Put a large frying pan or wok over very high heat.  When really hot, pour in 2 Tbspn oil and stir fry the pieces of lobster meat for 4-5 mins.  Do not overcook – when the flesh turns white, it is done.
  4. Remove to a warm plate covered with paper towel and keep warm in the oven.
  5. In the same pan, put remaining Tbspn oil, add white part of spring onions and stir over high heat for 2 minutes.  Add broccoli florets and stir over high heat for 2 minutes.
  6. Stir in Oyster sauce, toasted pine nuts and grated lemon rind.  Finally add pieces of Lobster meat and toss through gently.

For a healthy meal, serve piled over perfectly cooked brown rice with lemon pieces to squeeze over and sweet chilli sauce on the side
