Fines Herbes Sauce for Grilled Lobster
Enjoy chunks of tender lobster meat with a variety of dipping sauces.
Ingredient List:
- 2 lobster split halves
- 175ml fish stock
- ½ tspn Thai fish sauce
- 2 tspn lemon juice
- 50g butter
- Chives
- Tarragon
- Parsley
- Chervil
Method:
Whilst lobster halves are cooking under the griller...
- Bring 175ml fish stock, ½ tspn Thai fish sauce and 2 tspn lemon juice to boil in small pan. Boil for 1 minute.
- Whisk in 50g butter, a piece at a time to build up an emulsified sauce.
- Stir in the herbs – 1 tspn. each of finely chopped chives, tarragon, parsley and chervil.
- Season then spoon sauce over hot, grilled lobster.
Serve with steamed vegetables in season.
