Fines Herbes Sauce for Grilled Lobster


Fines herbes sauce for grilled lobster.

Enjoy chunks of tender lobster meat with a variety of dipping sauces.


Ingredient List:


  • 2 lobster split halves
  • 175ml fish stock
  • ½ tspn Thai fish sauce
  • 2 tspn lemon juice
  • 50g butter
  • Chives
  • Tarragon
  • Parsley
  • Chervil

Method:


Whilst lobster halves are cooking under the griller...

  1. Bring 175ml fish stock, ½ tspn Thai fish sauce and 2 tspn lemon juice to boil in small pan.  Boil for 1 minute.
  2. Whisk in 50g butter, a piece at a time to build up an emulsified sauce.
  3. Stir in the herbs – 1 tspn. each of finely chopped chives, tarragon, parsley and chervil. 
  4. Season then spoon sauce over hot, grilled lobster.

Serve with steamed vegetables in season.
