Green Crayfish with Fruit Salsa


Crumbed Cray Nuggets recipe.

Celebrate summer with this wonderful fruit and crayfish dish!


Ingredient List:


  • 1 Green (Raw) Lobster per person
  • Olive oil
  • Lemon
  • Chilli
  • Coriander
  • Garlic
  • Lime juice
  • Palm sugar
  • Brown sugar
  • Fish sauce
  • Firm but ripe, mango, papaya, rockmelon.

Method:


  1. Cut whole, green lobster in half lengthways.
  2. Prise meat out of the shell and rinse lightly to remove mustard.
  3. Create a marinade out of olive oil, lemon, chilli, coriander and garlic. Marinate the lobster meat for about 30 minutes.
  4. Meanwhile make the salsa out of cubed mango, pawpaw or rockmelon or a combination of the fruits.
  5. Create a mix of garlic, coriander, chilli, lime juice and balance this with a little palm sugar or brown sugar. Add a touch of fish sauce. Add fruit, which needs to be firm, and place the mix in the fridge.
  6. Place marinated meat back in shell and sear on BBQ on both sides.
  7. Serve salsa with cooked lobster.
