Green Crayfish with Fruit Salsa
Celebrate summer with this wonderful fruit and crayfish dish!
Ingredient List:
- 1 Green (Raw) Lobster per person
- Olive oil
- Lemon
- Chilli
- Coriander
- Garlic
- Lime juice
- Palm sugar
- Brown sugar
- Fish sauce
- Firm but ripe, mango, papaya, rockmelon.
Method:
- Cut whole, green lobster in half lengthways.
- Prise meat out of the shell and rinse lightly to remove mustard.
- Create a marinade out of olive oil, lemon, chilli, coriander and garlic. Marinate the lobster meat for about 30 minutes.
- Meanwhile make the salsa out of cubed mango, pawpaw or rockmelon or a combination of the fruits.
- Create a mix of garlic, coriander, chilli, lime juice and balance this with a little palm sugar or brown sugar. Add a touch of fish sauce. Add fruit, which needs to be firm, and place the mix in the fridge.
- Place marinated meat back in shell and sear on BBQ on both sides.
- Serve salsa with cooked lobster.
