Lobster, Feta and Avocado Salad

A salad made with the freshest of ingredients allows the delicate flavour of lobster meat to be really appreciated.


Ingredient List:


  • Salad mix (lettuce, baby spinach leaves, rocket and cherry tomatoes)
  • Feta cheese
  • Sun dried tomato pieces
  • Cooked rock lobster medallions,
  • Avocado
  • Extra virgin olive oil
  • Balsalmic vinegar
  • Cracked black pepper

 


Method:


  1. Prepare a bed of fresh salad mix consisting of lettuce, baby spinach leaves, rocket and cherry tomatoes sliced in half.
  2. Pile up:
    • slices of feta, (0.5cm thick, 8cm long and 3cm wide)
    • sun dried tomato pieces,
    • cooked rock lobster medallions,
    • and generous slices of avocado.
  3. Drizzle over extra virgin olive oil and balsamic vinegar mixed together.
  4. Finish with cracked black pepper to serve.
