Lobster, Feta and Avocado Salad
A salad made with the freshest of ingredients allows the delicate flavour of lobster meat to be really appreciated.
Ingredient List:
- Salad mix (lettuce, baby spinach leaves, rocket and cherry tomatoes)
- Feta cheese
- Sun dried tomato pieces
- Cooked rock lobster medallions,
- Avocado
- Extra virgin olive oil
- Balsalmic vinegar
- Cracked black pepper
Method:
- Prepare a bed of fresh salad mix consisting of lettuce, baby spinach leaves, rocket and cherry tomatoes sliced in half.
- Pile up:
- slices of feta, (0.5cm thick, 8cm long and 3cm wide)
- sun dried tomato pieces,
- cooked rock lobster medallions,
- and generous slices of avocado.
- Drizzle over extra virgin olive oil and balsamic vinegar mixed together.
- Finish with cracked black pepper to serve.
