Lobster Rolls
There are many casual as well as creative culinary uses for the lobster. This mayonnaise-based chilled lobster salad makes a perfect summer lunch in a toasted foccacia, baguette or fresh sandwich roll.
Ingredient List:
(Serves 4)
- 2 cups steamed lobster meat
- 1 cup mayonnaise
- 2 sticks celery, small dice
- 4 spring onions or shallots, thinly sliced
- 2 tbspn Dijon mustard
- Juice from 1 lemon
- 1 tbspn fresh parsley, finely chopped
- 2 tbspns basil pesto
- 1/2 tspn white or black pepper
Method:
- Combine all ingredients except lobster in a mixing bowl.
- Rough chop lobster meat and gently mix into dressing.
- Split open your fresh bread roll and butter the inside generously.
- You may want to toast it under the griller until golden brown.
- Fill with shredded lettuce and lobster salad.
