How to Remove the Flesh from a Lobster Tail

Remove meat from a lobster tail.

Most meat is in the tail, but your patience will be rewarded with sweet meat from the legs and the horns.


  1. Wear gloves or use a tea towel to protect hands from spikes.
  2. Hold the carapace firmly in one hand  and the tail in the other. Twist the carapace and the tail in opposite directions while gently pulling apart to separate the two sections.
  3. Rinse off lightly to remove any "mustard".
  4. Place the tail on its side on a firm surface and press down firmly with the hand to crack the shell down the centre of the back. Peel the shell away to remove the meat.
