Wok Fried Rock Lobster with Garlic and Black Pepper

Wok Fried Lobster


Ingredient List:


  • 2 green (raw) rock lobster tails
  • 1 tbspn good olive oil
  • 2 tbspn freshly crushed garlic
  • 1 tbspn freshly crushed black peppercorns (mortar and pestle)
  • 2 tbspns Oyster sauce
  • 2 chopped spring onions or shallots
  • Lemon juice
  • 2 tbspns freshly chopped parsley

Method:


  1. Pre-heat wok with oil and fry the garlic over medium heat til golden.
  2. Add the freshly crushed black peppercorns, and cook for 1 minute to release flavour.
  3. Add oyster sauce, shallots and chunks of lobster meat removed from the shell.
  4. Fry and toss continuously through sauce til cooked.
  5. Add a generous squeeze of fresh lemon juice and parsley at the end.
  6. Serve with steamed rice, noodles or Asian greens.
