Wok Fried Rock Lobster with Garlic and Black Pepper
Wok Fried Lobster
Ingredient List:
- 2 green (raw) rock lobster tails
- 1 tbspn good olive oil
- 2 tbspn freshly crushed garlic
- 1 tbspn freshly crushed black peppercorns (mortar and pestle)
- 2 tbspns Oyster sauce
- 2 chopped spring onions or shallots
- Lemon juice
- 2 tbspns freshly chopped parsley
Method:
- Pre-heat wok with oil and fry the garlic over medium heat til golden.
- Add the freshly crushed black peppercorns, and cook for 1 minute to release flavour.
- Add oyster sauce, shallots and chunks of lobster meat removed from the shell.
- Fry and toss continuously through sauce til cooked.
- Add a generous squeeze of fresh lemon juice and parsley at the end.
- Serve with steamed rice, noodles or Asian greens.
